How do I stop my email address from showing, as Welcome, and insert my user name as WhiskeyJack.

New to site - would like to post a broadcast and/or start a new forum. Am seeking to find a nationwide guide to recommended cafes and pubs around the UK. Purpose - to see whether bikers would find this useful - places to stop at for daytrips or stop-offs on longer journeys, meeting places etc. Can this site facilitate?
